Look for aromas of blueberry, chocolate, pepper and spice, and lurking flavors of black pepper, blackberries, blueberries, spice and licorice. You’ll want to match this up with richer, more fatty foods to create balance. Try it with roasted pork, barbecue beef, beef burgers, chicken in mole sauce. Vegetarians might want to try aged Gouda or Camembert cheeses, sauteed mushroom, eggplant, black bean, stuffed peppers or currants. With such high tannins, this is the perfect red wine to pour in a decanter and let it evolve for 2–4 hours (if you can wait!). Petite Sirah can also age for decades, if you’re patient enough.
